Indian cottage cheese

So .. this was something that i wanted to do for quite some time and i just got time to do it. Paneer or mostly called as indian cottage cheese is something like tofu . it does not taste like cheese at all (=.=)' weirdly enough .. haha

it is made from milk and there is many way to cook it and one of way to cook is with the spinach puree.

Here is the recipe to do it.

For the paneer

8 cups of Milk
1/2 cup lemon juice
1/2 cup hot water

Bring the milk to boil and turn off the heat. Then pour the mixture of lemon juice and hot water together. Keep stirring the milk, until the milk separates; the solid curds will separate from the watery whey. Pour it into a muslin cloth and rinse thru running tap water as it will take the lemon sourness. Wrap the muslin cloth on itself in order to squeeze out moisture from the curds. The more you squeeze, the firmer the resulting paneer. Leave it under a heavy saucepan for an hour or till it is firm.

For the spinach puree

Few bunch of spinach leaves
Few stalk of green chillies (up to your level of spiciness)
1 tablespoon garam masala
ginger paste
garlic paste
1 teaspoon cumin
1 teaspoon fennel seed
1 tablespoon cashew nut powder
salt pepper

In a pan, stir fry the spinach with salt and pepper. Then, blend it into puree using a food processor. Then fry the ginger, garlic , cumin and fennel seed in oil. Add the puree together with garam masala and cashew nut powder. Cook it for 10 to 15 minutes and then add the paneer. cook for another 5 minute. Whola.. u have a palak paneer.

For your information, i roughly did all the measurement. So try to adjust according to your individual taste.

Heatwave

Think of yummy drinks, ice creams and ice cold lemon tea during this fantastic weather. LOL !! Seriously, feel like dying (x________x) in this warm and super hot weather. I wonder how people are surviving with less water and food in Africa and India. Needless to say, we are suffering from this heat wave because of our generous contribution towards global warming.

Iced Lemon Tea

Not only its warm and all, now I have mouth ulcer which is killing me like hell. So, as usual when I get any sick I will do whatever it takes to cure it. I found few remedies for mouth ulcer, one of it that works for me was the holy basil leaves (check my previous post for detail on holy basil). Chew the leaves and drink it with water. Do these for at least 5 to 6 times per day.

Another thing you can do is to try drink cooling type drinks. For example ice lemon tea, young coconut, pudding and yogurt drinks. Basic 8 glass water per day is very important rule to follow. For this heat season, I share mango sorbet recipe which turns out to be yummy one (You do not need ice cream maker for this).

Mango Sorbet

  • 3 ripe mangoes
  • 200gm icing sugar
  • 1 ½ lemon (juice only)

Method:
Slice the mangoes into chunks then add in the icing sugar, lemon juice and mangoes to food processor. Blend to puree. Freeze it for 2 hours. And then take it out, toss into the food processor again and blend it again. Make sure this time it is really blended. And freeze it overnight. Whola.. enjoy the mango sorbet.

Salad Crave

All of sudden, it was salad for breakfast, salad for lunch and salad for dinner. All I was eating was salad salad salad and more salad. Hahaha I must be pretty crazy. Well, no harm to eat more vegetables right? The best part is that I did not really follow the salad recipe. I simply chucked whatever I had in fridge and guess what it taste just good (for me lah). Just to share the recipe if you guys want to try to.

Salad O Salad
  • 1 medium sized Cucumber
  • Few Salad leaves (the round type)
  • 1 or 2 Tomatoes
  • 3 slices of Chicken Ham
  • 2 slices of Wholemeal Bread
  • Salt & pepper for taste
  • Olive oil (up to you if you like it)

Dice those tomatoes and cucumber. In non-stick pan, add bit of butter or oil, stir fry the
shredded chicken ham. For the wholemeal bread, toast it and cut it into cubes (or any way
you want it). Add all into a bowl mix with olive oil, pepper and salt. Wholah, you have you’re
salad for breakfast, lunch and dinner. Oh for the olive oil, I did not add as I m not a big fan of olive oil. But it taste just fine for me without olive oil.

I am not done with salads yet, after few days I got face slapped (this is what we say in Tamil for being ‘muak’ of the food) by meaty foods, so I decided to be a VEGAN again which reminded me of my friends used to scold me for being vegan all the time. Sorry guys!!

Back to salad’s story, so even though I was vegan I didn’t get over my salad cravings. One fine afternoon, my mom decided not to cook, so I decided to cook (give her break lah). And when I was digging the fridge… Guess what? I found all ingredients for salad AGAIN. So I thought of making myself a Vegetarian Salad for lunch. If you wondering what happen to my mum, she backed out she chooses rice over the salad. Here is the picture of it.

For this recipe I used cherry tomatoes (yum yum) and vegetarian chicken which is made of soya. The process is same as the above.

I really regret I did not choose to be chef (so I can do more salads).
