Indian cottage cheese
it is made from milk and there is many way to cook it and one of way to cook is with the spinach puree.

Here is the recipe to do it.
For the paneer
8 cups of Milk
1/2 cup lemon juice
1/2 cup hot water
Bring the milk to boil and turn off the heat. Then pour the mixture of lemon juice and hot water together. Keep stirring the milk, until the milk separates; the solid curds will separate from the watery whey. Pour it into a muslin cloth and rinse thru running tap water as it will take the lemon sourness. Wrap the muslin cloth on itself in order to squeeze out moisture from the curds. The more you squeeze, the firmer the resulting paneer. Leave it under a heavy saucepan for an hour or till it is firm.
For the spinach puree
Few bunch of spinach leaves
Few stalk of green chillies (up to your level of spiciness)
1 tablespoon garam masala
ginger paste
garlic paste
1 teaspoon cumin
1 teaspoon fennel seed
1 tablespoon cashew nut powder
salt pepper
In a pan, stir fry the spinach with salt and pepper. Then, blend it into puree using a food processor. Then fry the ginger, garlic , cumin and fennel seed in oil. Add the puree together with garam masala and cashew nut powder. Cook it for 10 to 15 minutes and then add the paneer. cook for another 5 minute. Whola.. u have a palak paneer.
For your information, i roughly did all the measurement. So try to adjust according to your individual taste.

Heatwave
Think of yummy drinks, ice creams and ice cold lemon tea during this fantastic weather. LOL !! Seriously, feel like dying (x________x) in this warm and super hot weather. I wonder how people are surviving with less water and food in Africa and India. Needless to say, we are suffering from this heat wave because of our generous contribution towards global warming.
Iced Lemon Tea
Not only its warm and all, now I have mouth ulcer which is killing me like hell. So, as usual when I get any sick I will do whatever it takes to cure it. I found few remedies for mouth ulcer, one of it that works for me was the holy basil leaves (check my previous post for detail on holy basil). Chew the leaves and drink it with water. Do these for at least 5 to 6 times per day.
Another thing you can do is to try drink cooling type drinks. For example ice lemon tea, young coconut, pudding and yogurt drinks. Basic 8 glass water per day is very important rule to follow. For this heat season, I share mango sorbet recipe which turns out to be yummy one (You do not need ice cream maker for this).
Mango Sorbet
- 3 ripe mangoes
- 200gm icing sugar
- 1 ½ lemon (juice only)
Method:
Slice the mangoes into chunks then add in the icing sugar, lemon juice and mangoes to food processor. Blend to puree. Freeze it for 2 hours. And then take it out, toss into the food processor again and blend it again. Make sure this time it is really blended. And freeze it overnight. Whola.. enjoy the mango sorbet.
*peace out*
Bye Bye ~
